Ingredients
  

Birria Meat

  • 2 lbs Beef shank or brisket For slow cooking with spices.
  • 2 tbsp Olive oil Extra virgin, for searing meat.
  • 1 tbsp Chili powder
  • 1 tbsp Oregano
  • 1 tsp Cumin
  • 4 cups Beef broth To simmer the meat.

Pizza Base

  • 3 cups All-purpose flour
  • 1 tsp Active dry yeast
  • 1 cup Warm water
  • 1 tbsp Olive oil Extra virgin, for dough preparation.

Toppings

  • 2 cups Shredded mozzarella cheese
  • ½ cup Sliced red onions
  • ¼ cup Chopped cilantro
  • ¼ cup Sliced jalapeños

Instructions
 

Step 1: Prepare the Birria Meat

  • Marinate the meat with chili powder, oregano, and cumin.
  • Heat olive oil in a pressure cooker or pot, sear the meat, and add broth.
  • Slow-cook for 2-3 hours (or 1 hour in a pressure cooker) until tender.

Step 2: Make the Pizza Dough

  • Mix flour, yeast, warm water, and olive oil in a mixing bowl.
  • Knead the dough until smooth and let it rest for 1 hour to rise.

Step 3: Assemble the Pizza

  • Roll out the dough using a rolling pin and transfer it to a baking sheet or pizza stone.
  • Spread tomato sauce, followed by birria meat, cheese, and toppings (onions, cilantro, jalapeños).

Step 4: Bake

  • Preheat oven to 500°F.
  • Bake the pizza for 10-12 minutes or until the crust is golden and the cheese is melted.
